  • 1 Eggplant (Baingan)

  • 1 tsp Salt

  • 1 tsp Red Chilli Powder

  • 1 tsp Turmeric Powder

  • For the Batter:
  • 1 cup Gram Flour

  • 1 tsp Salt

  • 1 tsp Red Chilli Powder

  • 1 tsp Coriander Powder

  • 1 tsp Turmeric Powder

  • 1 tsp Coriander Seed

  • 1 tsp Crushed Red Chilli

  • Fresh Coriander

  • 1 tsp Cumin Seeds

  • Water as required

  • Cooking Oil for Frying

Directions

  • Cut the eggplant into round slices of medium thickness.
  • Sprinkle salt, red chilli powder, and turmeric powder on each side of the eggplant slices and keep them aside for 10-15 minutes.
  • In the meantime, prepare the batter. In a mixing bowl, add gram flour, salt, red chilli powder, coriander powder, turmeric powder, coriander seed, crushed red chilli, fresh coriander, cumin seeds, and enough water to make a thick batter. Mix well.
  • Heat oil in a deep frying pan on medium heat.
  • Dip each eggplant slice into the batter and coat it well.
  • Carefully drop the coated eggplant slices into the hot oil and fry until golden brown and crispy.
  • Remove the fried eggplant slices with a slotted spoon and place them on a paper towel to absorb excess oil.
