Besan Dahi Bhalla Recipe
2 cups gram flour (besan)
1 teaspoon red chili powder
1 teaspoon cumin powder
1 teaspoon red chili flakes
1 teaspoon chaat masala
1 teaspoon carom seeds (ajwain)
1 teaspoon salt
1 teaspoon turmeric powder
Β½ teaspoon baking soda
1 to 1Β½ cups water (as needed)

Chilled yogurt (dahi)
Tamarind chutney
Green chutney

Start by adding gram flour to a large mixing bowl. Add red chili powder, cumin powder, red chili flakes, chaat masala, carom seeds, salt, and turmeric powder. Mix all the dry ingredients well so the spices are evenly distributed.
How to Make Besan Dahi Bhalla
Now gradually add water and mix to form a smooth batter.
The batter should be thick but flowing, similar to a thick pancake batter. Once the batter is mixed, begin whisking it continuously for 5 to 8 minutes using a spoon or hand whisk.
This step is very important.
Whisking adds air to the batter, making the bhallay light and fluffy. You will notice the batter becoming smoother and slightly lighter in color.
After whisking, add baking soda and gently mix it into the batter. Do not overmix at this stage.
Heat oil in a deep pan on medium heat. Once the oil is hot, carefully drop small portions of batter into the oil using a spoon or your hand.
Fry the bhallay on medium heat, turning them occasionally, until they are golden brown and evenly cooked. Frying on medium heat ensures the bhallay cook well from the inside without burning.
Remove the fried bhallay and place them on kitchen paper to absorb excess oil.
Take a bowl of warm water and add the bhallay to it. Let them soak for about 5 minutes.
This step softens the bhallay and gives them their signature melt-in-the-mouth texture.
Gently press each bhalla between your palms to remove excess water.
To serve, arrange the bhallay on a plate. Pour chilled yogurt generously over them.
Drizzle tamarind chutney and green chutney according to your taste. Finish with a sprinkle of chaat masala for that classic street-style flavor.
